Escape the tourist traps and find the authentic heart of local tradition. Chevermeto has been open since 1996 and the formula hasn't changed: a whole lamb roasting on an open spit, traditional Bulgarian recipes, and a live folk programme every evening from 20:30. Singers in regional costumes open the show, the dance ensemble follows, and at some point during the evening someone will invite you to join the horo. Most people do. 🎭 The Evening Programme

At 20:00 the folk and pop singers open the show. At 20:30 the dance ensemble takes over — professional dancers in regional costumes performing horo and traditional dances from across Bulgaria. At 21:00 the singers return for the final set. Throughout the evening guests are invited to join the horo. It's part of the experience and you don't need to know the steps. The programme runs every evening, including weekdays. Plan for a full evening — 2.5 to 3 hours including the show.

The name comes from the dish — chevermeto is whole lamb roasted slowly on an open spit, and it's been the centrepiece here since 1996. The rest of the menu covers the Bulgarian classics: shopska salad, kavarma, traditional grilled meats, and a rakia selection that takes the Bulgarian spirit seriously. Portions are generous and the food is honest. The kitchen doesn't cut corners on regional recipes.
