The name comes from the dish: chevermeto is whole lamb roasted slowly on an open spit, and it's been the centrepiece of this restaurant since 1996. The evening builds around it - traditional Bulgarian recipes, generous portions, and a programme that starts when the plates arrive and doesn't stop until late.
At 20:30 the folk singers open the show. At 21:00 the dance ensemble takes over - professional dancers in regional costumes performing horo and traditional dances from across Bulgaria. At some point during the evening someone will invite you to join. Most people do.
